B-Cubed Bakery is a neighborhood bakery in the Gault Village neighborhood of Ypsilanti. Their focus is on serving their community through great baked goods. This includes not only their customer base, but also working directly with local farmers. They also place an emphasis on fresh milled whole grains (milled on site on their New American Stone Mill) and rebuilding the local grain economy by working with regional and preferably local grain farmers. The bakery was started by Ben, a former software engineer turned baker (and back and forth a couple of times). Ben always loved bread but began to think in 2017 that it was something he might enjoy doing it professionally as well. Between jobs Ben took a two year sabbatical, first enrolling at the Great Lakes Culinary Institute in Traverse City Michigan. During his time in school he worked at a small brick oven bakery staffing the pastry half of the operation. After school Ben spent a year working the night bread shift at Zingerman’s Bakehouse; making great friends and learning a huge amount around baking at higher volumes while still creating real bread. He also gained critical practice, shaping and baking thousands of loaves, as well as a truly terrifying number of bagels. After Zingerman’s Ben started B-Cubed Bakery. A cottage business selling at the Depot Town Farmers Market in Ypsilanti Michigan for the 2022 season. In October of 2024 after a few years at the markets B-Cubed Bakery opened a retail location in the Gault Village neighborhood of Ypsilanti.
